<<A friend of mine put in a Formica type laminate counter top in her kitchen and said that if whe knew how little it cost, she would have done it years ago.
Plastic laminate is my preferred variety of kitchen counter top. It's inexpensive and durable, although I notice that a tenant of mine managed to carve up a countertop by using a knife directly on the laminate rather than using a chopping block.
Personally, I tend to find stone age countertop people willing to spend ridiculous amounts on countertops. In my view, they are mainly a fashion item, and in twenty years a new fad will make those old, turn of the century stone countertops look dated, however functional they may still be.
