This is just a guess, but I would bet that most of the pork-like substance comes from places other than the loin. Remember, hot dogs don't come from dog loin. - ResNullius

If you buy a whole boneless pork loin at Sam's Club it's the Loin. I know all the muscles of animals, and there's no way they can "fake it." I can tell just by looking at a cut of meat where it came from.
The loin is the longissmus Dorsi muscle and has a very characteristic shape. - Art
