I bet it's the day (after the weekend) where they go through and mark down the meat after the weekend. When I worked at Winn Dixie in Vero Beach, Florida on A1A we used to really stock up the meat counter on Fridays and Saturdays, then let it run down on Sundays, then go through on Mondays and mark down all the meat that was close to going out of date. When Chuck Roast was on sale it was hell. - Art

Good days for leftover meat: after Memorial Day, Fourth of July, Labor Day; especially if they were rainy.
