Many years ago, in CA, I bought a rear quarter of dry aged beef.

I've never actually had any, but Dr. Carpenter, in a meat processing course I had at UGA showed us some slides of what it looked like. It was pretty gross looking to me. They had wrapped the loins in muslim, and it had actually grown a rind of mold on the outside. He said they trimmed all that off there, right down to the muscle, before slicing it. My understanding is that there are some restaraunts in New York City that specialize in dry aged beef. I knew it "weeped" as it hung there, and thus sort of dried out. The class I had was way back in the early 1970's so it was a LONG time ago. I'm sure that the standards have probably changed somewhat since then. - Art
