I think the one you are referring to with mold growth is when the loin is cut out and aged for months, not just a few weeks. With this type of aging, some of the flavor comes from the lactic acid producing bacteria. - cattleman

Yeah, that's the one I saw pictures of. Dr. Carpenter only had slides. To be honest, it looked disgusting to me. I found it hard to imagine that it would taste good. It was whole loins on shelves covered in muslim cloth. He said they set them there for several months, till the meat almost turns black. Who would eat that? - Art
