We don't have an attorney - just us.

I curious how the pre-trial conference will go. As you have experience, will the judge address our Motion to Dismiss before going into other details? Will he ask us to divulge any information that would allow the Plaintiff to revisit its strategy? Generically speaking, how does this progress?

My advice would be to engage the services of an attorney. The creditor will try to move the jurisdictation of the case out-of-small claims court. At that point you will definately need an attorney to defeat that motion in small claims court.
