Didja know that "manchego" means "of or from La Mancha"? A lot of people think it means "sheep cheese." Manchego cheese is usually from sheep but the word itself is just an adjective. Or a noun. "Un manchego" can mean "somebody from La Mancha." The play "Man of La Mancha" could have been called "Manchego." But nobody would have bought tickets.
