I think I might like to try adding some julienne carrots, Napa cabbage (instead of Romain), green onion, Daikon radish sprouts and some sesame seed oil (and/or roasted sesame seeds.) The sauces sound interesting, especially adding Sriracha - Both HOT and flavorful. I'm thinking chopped cilantro, freshly chopped ginger, diced jap peppers, some soy sauce, chopped garlic chives, a couple of dashes of sesame seed oil, and maybe a splash of white vinegar might work OK as an alternate dipping sauce.
