Airport with wildest takeoff: John Wayne Orange County airport.

In the wildest landing category, I would nominate Wellington airport in New Zealand. The main airstrip is right next to the bay, so you aren't over land until you are literally about to touch down. It always looks to me as though we're about to crash into the waves. Also, the Wellington wind is legendary - there's often a cross wind and/or turbulence from the hills nearby. It's not unusual for the plane to be bucking like a bronco, or pointing somewhere completely different from its direction of motion, or both at once.

Wellington takeoffs are usually less adventurous but can be interesting in certain weather conditions, when a strong downdraft forms somewhere beyond the runway. It feels like you're in free fall for a few seconds. Inexperienced flight attendants have been known to scream when this happens (how embarrassing!)

Of course, I've heard stories of landings in Asia/South America that would make even Wellington look tame.
