A good description of his style that I read is that he travels somewhere in the world, eats something wonderful or at least fascinating, and then goes home to New York and tries to make it 50 different ways, in search of a perfect method. along the way, he often taps the expertise of far-flung experts -- say, on ketchup or potatoes.Great stuff for food aficionados. :)Selena
