Another good/easy way to cook is the crock pot. Because you can make large amounts, you can get quite a few meals out of a crock pot. Dice some vegitables, add some meat, add spices and around 1/2 C liquid and Bob's your uncle. Plug it in and turn it on in the morning and 8-10 hours later when your back from work you have food.

What's even better, if you buy a new crock pot a book of receipes is thrown in.
