I posted this on the vegetarian fools board--but wanted to make sure everyone else knew--whatever you do just don't prepare beans (especially red kidney beans) by slow-cooking only:

I just got an email saying the message was deleted because apparently I posted too much of the original content--odd since I believe the information I posted pretty much unabridged was from gov't publications which I thought is public information. In a nutshell, make sure to both soak and boil beans and legumes before eating. And never eat kidney beans that have been prepared by slow-cooking in a crockpot only.

Weird. I eat slow-cooked garbanzos fairly often. One of my favorite recipes is this (but an earlier version published of it without the orange, mustard, or celery):

Your first link is to a Canadian government website. According to Canadian law:
Unless otherwise specified, copyright in works prepared by or under the direction or control of the government of Canada (Crown) is owned by the Crown.

The rules are different for US government publications. Works of the United States Government are (in most cases) in the public domain. Note that I'm writing about federal government works. State and local governments may and often do claim copyright in their publications.

I'm of the opinion that it's almost always better to quote brief excerpts and provide a link, rather than to risk accidentally using intellectual property to which I am not entitled.

Well, that explains it I guess although I don't know why any gov't would not want information impacting public safety as widely disseminated as possible and waive any copyrights. So I am of the opinion that if human health and safety is involved, I'd rather err on the side of posting as much information as possible than risk someone else's well-being.

I've never liked kidney beans, and maybe this is why.

Down here in S.E. Loosiana, red kidney beans are used in the Monday night supper staple “Red Beans & Rice”. I have never had a problem with them but, then again, I have never tried to cook them in a slow cooker, me.
