Ben & Jerry's book does not call for cooking any of their ice creams (at least that I could find) I use their recipe's a lot with the cooking method I suggested above. Cooking really improves the texture and the storability.

I should add to my cooking instruction: after when cooking the combined milk and egg mixtures be sure that they don't boil. This causes egg lumps. It's so automatic to me that i didn't think to write it down.
