Spanish "tortilla," which is a potato omelet:

Dice a potato, chop an onion and whatever other vegetables you want, even some ground meat, chopped bacon, chorizo or beans--whatever makes it Tex-Mex to you.

Saute' the vegetables/meat till done, then pour scrambled eggs over it and cook till done. You could top w/salsa.

For the two of us, we carmelize 1/2 large onion, add 1 diced potato and saute' till nearly done, then usually a cup or 2 of chopped leafy greens (spinach, kale, chard), and occasionally a couple/few mushrooms or a chopped slice of bacon. We only use 2 eggs so it's mostly other ingredients with the egg barely holding it together, but you could use as many eggs as you like.
