Mushroom, swiss and spinach omelet for me. Since I got my cholesterol under control and read that the yolks are pretty good for ya, I enjoy my omelets a lot more. Of course the yolks are supposedly better if not broken while cooking(some weird oxidation theory I read) but sometimes an omelet is so darn good! Though usually I do with soft boiled and a plain geek yogurt with fruit, flax and a little bran cereal and protein powder.
