CASHEW CREAM (recipe posted by 1DEG a long time ago and I hope I'm remembering correctly))

Soak raw cashews in the same volume of water for at least an hour (I soak them overnight or all day to get them as soft as possible).

Rinse, add to blender with water equal in volume to original amount of cashews, and blend till as liquid as you can get it.

If you have a Vitamix or Blendtec, I think you're done. But if you have a regular blender or food processor like me, you have to sieve the cashew slurry afterwards. No worries! Cashew sludge is delicious, mild and fluffy, good on cereal, fruit, in yogurt, as a casserole, stew, or sauce ingredient. Very light tasting, coz, hey--cashews!

Today's breakfast:

Oatmeal with cashew sludge and toasted sunflower seeds, cooked in almond milk

Fruit salad (oranges, mangos, blueberries, raspberries) topped with cashew sludge

Coffee with cashew cream

Gesundheit! (good health)
