Hi, all - Haven't been here in a while - at least 6 months - but this chicken recipe caught my eye and I just had to pass it on. It sounds wonderful, and just the thing for those people who can't tell when poultry is cooked thoroughly but not dried out!BeejBaked Stuffed Chicken3 - 4 lb roasting chicken1 C melted butter1 C stuffing, however you wish to prepare it1 C uncooked popcornSalt/Pepper to tastePreheat oven to 350 degreesBrush chicken well with melted butter, salt and pepper.Fill cavity with stuffing and popcorn.Place in baking pan with the neck end toward the front of the oven.Listen for popping sounds. When the chicken's back end explodes, blowing the oven door open and propelling the chicken across the room, it's done.
