Well, I'm afraid that except for baking, I don't really use recipes, per se (that is to say, I don't measure, so it's hard to write down).

The brain is an amazing organ... even when you aren't "measuring" (i.e. using spoons, cups, or weighing), those little neurons in your head are busy doing it all for you!!!

I've learned to make mental notes of "how much" of whatever so that I can write down recipes for others (and myself). Of course, these are "little white lies" since they are only approximations. But "approximations" are the spices of life!!!

How many times have I watched Jeff Smith (Frugal Gourmet) (and others) on TV say "Add one tablespoon of olive oil..." as he pours it from the bottle into the pan...???
