Cut a purple cabbage into eights, along the axis of the stem so that you have wedges held together by the stem. Cook flat sides down in just a bit of oil, salt, and pepper, until each side starts to carbonize.

This is quick, healthy, colorful, and looks elegant. You can adjust the cooking time to a bit crunchy or softer. It's good alone or with basalmic vinegar.
