Last night we made pad thai. We used to eat this amount for a single meal, maybe small portions left for breakfast or lunch the next day. But since we've been eating smaller portions of carbs & protein, we ate just half. Each portion has 2 oz firm tofu, 2 oz shrimp, 3/4 of a large egg, and a tablespoon or so of roasted peanuts. Plus rice noodles, bean sprouts, shallots, scallions, cilantro, tamarind, garlic, fish sauce, a little agave, peanut oil. And a nice squeeze of fresh lime. All in this weensy little apartment kitchen. We really like to cook together--kind of a shared hobby you might say. Then we had some boiled edamame and Asian salad (well, mostly lettuce with radish & cilantro).Tomorrow I'm planning to fix Louisiana style red beans & rice with greens--that is, a vegan version I found online. No andouille sausage or liquid smoke, but chipotles in adobo will hopefully serve that purpose--we shall see.Time to go to the farmer's market. We love that, too.What are y'all eating this weekend?
