Drum-roasting coffee burns the beans as they come in contact with the hot drum.

That is incorrect. The beans are constantly tumbling in the drum so the contact is always changing. I think coffee has a richer flavor when drum roasted. I use my Behmor drum roaster at home and it's also great for roasting almonds and they don't burn either. I started home roasting with air roasting in a pop corn popper and much prefer the Behmor.

Beans can be burned and over roasted no matter which method is used.
