This is an interesting kit. I'm looking into seeing if I can find a used refrigerator in decent condition at a reasonable price that I can dedicate to dry aging some cuts of beef.

I like this guy's comments about why it's important to bring a steak up to room temp before cooking and how he rests the steak after cooking, evenly cooked to the degree of done you wish throughout the steak, and appropriately relaxed:

Really, really rare might not work with his final insulated resting technique, but I think it will work very well for medium rare to medium, or well done. I prefer steaks done medium rare and will give it a try.

Check the freebies on Craigslist, they often have freezers and refrigerators. The color probably won't be fashionable :-)
