Electricity would be tying themselves into a grid.. and that would be a "no no"

IMO, that is not the reason.

The Amish do not use electricity because it would make their life *too much* easier. Their basic philosophy is along the lines of making something through hard work and effort is good. They lose that "hard work" part if they use electricity--and so, in one sense, they will NOT have "done the hard work"--so they have not "earned" the reward of doing/making whatever it is they did.
