For groceries: Depends on where your apartment is. There are no supermarkets like you have in USA, but more on the order of: Butcher shop, Bread shop, Convenience store, GreenGrocer, Bodega, etc. You can experience multi-stop shopping and tell your children that this is how it once was done in America.

Transport away from Madrid: Rent a Ford or Fiat or whatever appeals to you. Have both adults get International Driver's Licensees (this is not mandatory, but sure comes in handy when the Guardia Civil ask questions). ALWAYS MOVE ABOUT THE COUNTRY WITH YOUR PASSPORTS ON YOU. In Spain, Passports must be surrendered to hotels overnight so the Guardia Civil can keep track of visiters. Spain is not easy to drive. The highwways sometimes shut down. Being there inAugust should help. If you go north, consider Picos de Europa in lieu of the Pyrenees. Consider minimizing your time on the coasts since that is where you will find most of the heavy traffic in August.

Daughter and Bullfight: Your call. If she can appreciate the pagentry it can be a good experience. If she comes away impressed only with the gore it can be traumatizing. A book to read (You read it first before you give it to her) is "Or I'll Dress You In Mourning". Any youth that can appreciate the book can appreciate the pagentry.

While you are out and about the country, consider staying in Paradors. Any travel agent in Madrid can help you there (American Express travel has a nice Madrid presence). The Paradors are government run Hotels, usually in converted buildings with historical significance (Castle, Convent, Friary, Monastery) or near some special place.
