GF Cinnamon Buns with Cream Cheese Frosting
(makes 6-8 buns)


1/4 c. milk
1 TB butter
14 TB Better Batter Gluten-Free All Purpose Flour
2 TB. sugar
1 egg
3/4 tsp yeast
1/4 tsp salt


3 TB brown sugar
1/2 TB cinnamon
1 TB butter
approx. 1/4 c. raisins

Combine milk and butter. Heat in microwave until temp. reaches 120-130 degrees

Pour into mixing bowl. add yeast and sugar. Let stand 5 minutes.

add flour, egg, salt mixing well. form into ball.

Let 'rise'* , covered 30 minutes in oven which has been preheated to 200 degrees, then turned off.

mix brown sugar and cinnamon in small bowl.

Roll out dough (between 2 sheets of waxed paper or on lightly floured surface) into rectangle.

Spread melted butter over dough. Sprinkle with cinnamon sugar and raisins.

Roll dough starting at long side into log.

Cut into 1/2 " slices.

Place cut side up in sprayed 8x8 or 9x9 cake pan.

Bake at 350 for 15-20 minutes or until golden brown.

Cool at least 10 minutes before glazing with mixture of:

1 oz. cream cheese, softened
1 TB butter, softened
1/4 c. 10X sugar
1/4 tsp vanilla (or orange) extract

*note: as I'm sure many of you already know--GF doughs don't rise much, so the usual 'doubling' in size isn't going to happen. I use the yeast basically for the traditional yeast flavor.
