GF Cinnamon Buns with Cream Cheese Frosting(makes 6-8 buns)Dough:1/4 c. milk1 TB butter14 TB Better Batter Gluten-Free All Purpose Flour2 TB. sugar1 egg3/4 tsp yeast1/4 tsp saltFilling:3 TB brown sugar1/2 TB cinnamon1 TB butterapprox. 1/4 c. raisinsCombine milk and butter. Heat in microwave until temp. reaches 120-130 degreesPour into mixing bowl. add yeast and sugar. Let stand 5 minutes.add flour, egg, salt mixing well. form into ball.Let 'rise'* , covered 30 minutes in oven which has been preheated to 200 degrees, then turned off.mix brown sugar and cinnamon in small bowl.Roll out dough (between 2 sheets of waxed paper or on lightly floured surface) into rectangle.Spread melted butter over dough. Sprinkle with cinnamon sugar and raisins.Roll dough starting at long side into log.Cut into 1/2 " slices.Place cut side up in sprayed 8x8 or 9x9 cake pan.Bake at 350 for 15-20 minutes or until golden brown.Cool at least 10 minutes before glazing with mixture of:1 oz. cream cheese, softened1 TB butter, softened1/4 c. 10X sugar1/4 tsp vanilla (or orange) extract*note: as I'm sure many of you already know--GF doughs don't rise much, so the usual 'doubling' in size isn't going to happen. I use the yeast basically for the traditional yeast flavor.
