While my brother was living with us for a while, he ordered some gourmet meats online, including various frozen sausages. We've eaten the rest by now, but still had this one package of breakfast sausage hanging around since last spring. I decided to use it today.

Hubby had also made some waffles last weekend--using Pamela's Ultimate GF Baking mix and our belgian waffle maker--and froze the leftover waffles.

Alas, we were out of maple syrup, but we had a cup of blueberries left from my Costco run last week. Hubby made blueberry syrup (way better than what you get at IHOP) using the cup of blueberries, 1 slightly heaping teaspoon of sugar & enough water to keep it from sticking, cooked for 5 minutes or so, and buzzed lightly with the immersion blender. Yum! even better than maple syrup! We each had a thick waffle deeply covered in rich blueberries plus a sage-y sausage and a cup of deep, dark coffee. sigh. It's nice to take a break from light breakfast smoothies!
