When I rollover my retirement from my previous employer into a traditional IRA, can I select my own investment options (stocks, mutual funds, etc) or will the broker account dictate what my funds are invested into? >>>

You control the assets yourself..Thus the term Self Directed IRA. Fron your comment I also get the impression that you believe brokers generally have "control" over your account and you are bound to accept their advice. PLEASE be careful about Stockbrokers, believe me I know from whence I speak and you want to keep your guard up at ALL times.
