Here's one more for ya. Used to make it all the time when it was just the two of us. It's essentially a tuna souffle.

Tuna Poof

2 Tbsp butter
2 Tbsp flour
1/2 tsp (or more to taste) garlic powder
dash salt
3/4 c. milk
2 eggs, separated
1 sm. can (6 oz) tuna, drained

1. preheat oven to 350. Grease an 8 inch quiche dish or straight-sided casserole dish. Melt butter over medium heat, and stir in dry ingredients. Cook 1 minute. Gradually add milk, stirring constantly until mixture boils and thickens. Remove from heat.

2. In a small bowl, beat egg yolks slightly. Beat a small amount of the milk mixture into the yolks. Gradually stir yolks into the rest of the milk mixture, stirring rapidly or whisking to prevent lumping.

3. Meanwhile, beat egg whites until stiff peaks form. With spatula or whisk, gently fold egg yolk mixture and tuna into egg whites. Pour into prepared dish and bake 20 - 25 minutes, or until a knife inserted in the center comes out clean.
