Hi and thanks for the reply-- Those figures are for real? You didn't misspeak? It's counter-intuitive. 3 gallons at 212ish cooled to 110ish by the addition of a half gallon's worth of ice? I understand a good bit's lost throught he sides of the vessel, but the numbers still surprise me. But I'll get two quart containers at the store this afternoon!

Are you talking hops that would ordinarily be added at the very end of the boil--preserving the aromatics by not overheating them, adding them after this cooling? (If I have that right) That's neat. I'll have to try that w/the Old Peculiar recipe (from the szamatulski's) I love.
