Another thing to think about. Fatty foods have a lot of calories, but those calories are not very accesible as fuel when riding. The brain only runs on glucose, so without a constant supply of carbs you will bonk no matter how much fat you take in. Complex carbs such as the ones in powerbars are a much better choice than fatty foods. Keep a few gels handy. It's amazing how much better you can feel mentally with little sugar in your blood.
