I also cooked a prime rib for Christmas Dinner. I took a different approach as I smoked mine at 250 degrees with some oak. Stuck a temp prob in it and pulled it at 120. Then into a 450 degree oven until it reached 130 degrees. Pulled it and let it rest for 45 minutes and then ate. Wonderul dinner!Phred
