I am going to post a mistake in the making, because the Fool will contribute another $.02 to the worthy cause. This comes about from thinking about instant potatoes over on LBYM (thread there has to do with dawnc's father, who cooks massive Thanksgiving dinners for veterans' groups).

Crusted Salmon

A salmon fillet, maybe 1 1/2 pounds, skin on, but remove the little bones with needle-nosed pliers

For the crust: 1/2 c. mayonnaise, 1/4 c. finely ground pecans, 1/4 c. seasoned bread crumbs. Maybe some dried tarragon.

Slice a lemon very thin and place over the salmon. Put the crust on top. Bake at 350 F for about 20 minutes. Halve some plum tomatoes lengthwise and bake them too, maybe with a drizzle of olive oil. For the last few minutes you might want to turn the broiler on to brown things, but the fish does not want to be cooked completely through.

Serves 4.

WARNING TO FOOLS I just thought this up and that is why it is in a "mistake" thread. I may not even try it for 10 days or so.
