I cannot comment on the Mac version of Outlook - it is different from the Windows version. For one thing, the Windows version keeps all data in a single file Outlook.pst (default name). The file system on the Mac side is different. Apple's Contacts in my opinion is not going to smoothly import from Outlook 2007.

I suggest you contact Apple (try an Apple Store) and set up an appointment - be sure to check the "This is a Business" item. Have the current field list from Outlook 2007, and similar data for Excel (I am assuming since you mentioned exporting to Numbers, you do that now to Excel). Bring a typical spreadsheet and your PST file on a thumb drive.

Apple should release the hardware as they have stated. In my experience Apple's public statements are significantly more accurate than those from Microsoft with regard to release dates. That said, if you want the new machine, order on the first or second day - they already have said supplies will be constrained and I believe that also.

Apple Mail does an excellent job of replacing Outlook for email for most users. You may want to get a $35 program Text Expander for adding boiler plate text.
