I have made something similar to these - all my measurements are *ballparks*So - cook & cool the shrimp (if you are using shrimp) - however you wishSteamed with seasonings/boiled/whatever.Soak rice noodles overnight in cold waterIn a bowl Toss:Pulsed or chopped mint, cilantro & Thai basil together (1/4 to 1/2 cup each per your preference)add to torn 1/2 head lettuce of choice (baby bibb or romaine are nice)add in thinly sliced or matchstick carrot & cucumberadd juice of 1 lime1/2 to 1 Tablespoon Rice or cider vinegar(optional super thinly sliced hot peppers & green onions)you can add the shrip & noodles here and toss and serve as a saladORmake the rolls per the instructionsjust shrimp, mound of veggie/herb mix and noodles, wrappeace & different presentationthas served these at a TMF gathering with Sweet Chili sauce, NOt the peanut sauce which seems like it would overwhelm all the flavors
