I like this guy's comments about why it's important to bring a steak up to room temp before cooking and how he rests the steak after cooking, evenly cooked to the degree of done you wish throughout the steak, and appropriately relaxed:

Really, really rare might not work with his final insulated resting technique, but I think it will work very well for medium rare to medium, or well done. I prefer steaks done medium rare and will give it a try.
