I must have eggs, or something with a lot of protein in it, or I get blood sugar issues later in the day.

Sometimes I have two breakfasts within a couple hours of each other, such as a poached egg and toast with coffee and fruit when I rise and then a bowl of cereal later.

I try to vary the eggs, although I don't have a problem with eating them poached or soft boiled every day. I just happen to love them that way. But I'll throw together an omelet with whatever veggies are on hand, such as asparagus, onions, carrots, mushrooms -- any or all in one omelette. I also will add egg whites from a carton to an egg to make an omelette or scramble with more bulk. I use a nonstick pan and cooking spray. I top my omelette with sliced tomatoes or salsa and may have a tortilla with it.

On a rare occasion, I'll make French toast with egg/eggwhite, cinnamon, nutmeg, cardamom and vanilla in a nonstick pan and put a tablespoon of honey or agave nectar or maple syrup on it plus sliced strawberries and/or bananas.
