I think it's doable if you can pay off all your debt in 15 years (including mortgage on the new house). I'd also let the kids rely on loans/grants/scholarships/work for college. That way, your overhead costs will be low (housing takes such a large chunk of income), and you can rely on the fluctuating self-employment income to live on.
