I'd like more detail on your braised short ribs...were the pureed beans a side dish or part of the main course?
Not as cheap as short ribs, but I'm marinating the second of the flank steaks I got on sale 2 months ago in lime juice, garlic and Thai fish sauce (it also smells yummy and isn't even cooking yet ;-) About to put up coconut rice and steamed broccoli, and will then stir fry the beef with a red onion.
Last week's meals were 2 dinners of flounder (on sale) with broccoli, a hamburger with zucchini (I froze the rest of the burgers--made 4 from a lb of beef on sale--great for when I get home late), 3 dinners of ratatouille (last was a 1/2 portion so I used it as sauce for cheese ravioli), and hot pot (soba noodles cooked in broth with tofu, bok choy, shiitakes, pea pods, and various seasonings)--one of my cheap-eats faves.
This week, after the beef stir fry, I'm planning teriyaki salmon and sesame greens, Thai lettuce wraps (ground chicken) and eggplant, and vegan black bean soup--another cheap-eats fave.
