If time is an issue you can use 5-6 inch flat bread instead of pizza dough. (Flat bread is like pita bread without a "pocket".) Just put some spaghetti sauce on it, add some herbs, and layer on a few simple toppings. Also, I like to drizzle a little olive oil over the bread before adding the sauce or toppings. It bakes quickly and comes out crispy if you have one of those pizza stones. It's nice because everyone can design their own personal size pizza.

Oh, instead of flat bread you can also use bagels for a smaller meal. Flat bread and bagels both freeze well.
