What's for supper?

I haven't had deep fried bacon wrapped chicken livers in a while with a slurry of hot mustard on a Romain lettuce leaf - guess I'll do that.

Does anyone know the whereabouts of MZ Wiley? I am getting VERY worried! I hope she is OK!!

I wanted to try out a new rub so I bbq some baby backs ribs.Rub turned out pretty good,a bit on the sweet side.
Rub #2
3/4 cup white sugar
3/4 cup brown sugar
1/3 cup black pepper
1/4 cup paprika
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp chili powder
1 Tbsp celery salt
1 Tbsp hickory salt or kosher salt
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp cayenne

Basic Barbecue Sauce
Makes about 2 ½ cups

2 cups ketchup
¼ cup cider vinegar
¼ cup Worcestershire sauce
¼ cup firmly packed brown sugar
2 tablespoons molasses
2 tablespoons prepared mustard
1 tablespoon Tobasco sauce
1 tablespoon of your favorite barbecue rub
2 teaspoons liquid smoke
½ teaspoon black pepper

Lose the sugar! Or, at least lose the white sugar.

I don't use any sugar in my rubs. But, a little bit of brown sugar or molasses wouldn't be bad.

Not surprised that it turned out pretty sweet, since the vast majority of the rub was sugar. I bet it caramelized nicely on the outside of the ribs, though.
I agree with OleDoc-- I'd ditch the white sugar in that rub. I'd probably also ditch the brown sugar, and substitute 1/4 to 1/3 cup of demerara or other raw cane sugar.

Thank you for the concern due to my absence, we are overwhelmed with end of the school year work and special activity. We've helped with the end of the school year play, spring picnic, spring fund raiser carnival, etc. Usually April and May are just crazy times for us.

Mr. Wiley has been out in the boat fishing the crappie and small mouth are biting, he's been a happy fisherman.

All is well with us and we'll be back very soon!
