I've got a slow cooker, but I am afraid to leave it all day. Most of the recipes calls for 8 hours and we'd be gone from the house longer than that.

Okay, I can understand that part. But is it something you could use on weekends? You could make a meal in the slow cooker while cooking something else in the oven.

One of my standard meals would be some kind of grain (couscous, bulgar, pilaf, whatever) some sort of already cooked meat or chicken, and some vegetables. It doesn't take long to cook, and there are a lot of variations you can ring. You could also use various sauces when making things.
