I've had the 27" iMac for about a week now. 16 GB, 1 TB Fusion drive, 3.4 Core i7. So far, it's been a great machine. Mine came loaded with 16 GB Ramm, but the door for upgrades looks to be fairly easy.I can't speak to the pro photo setups, I haven't gotten into that too much. I run a partitioned 4 TB external USB 3 G hard drive, and use a 2 TB partition for TM, as well as a 1 TB partition for CCC cloning. Works like a charm.

I've been trying to determine the differences between Lightroom and Aperture. I guess the main points favoring Aperture have been integration on the Mac and speed, and some formatting favorites. The only negatives I've heard about Lightroom are that it's slow, and a little difficult. I've always looked at Adobe products with a tilted head and confused eye, maybe it's just me.

Now that I've used 10.8 for a week, no issues. No major differences, it's worked well. I would suggest her biggest issues would be her preferences for software, since I firmly believe she'll love the iMac compared with the Dell.
