Kale tossed with olive oil and a little kosher salt and roasted.

Speaking of kale, I've been eating more of it recently. I like it sauteed with garlic - similar to the way I usually saute spinach. (A little bit of bacon doesn't hurt either!) But I find that I have to be really careful to remove just about all of each stem as I really don't like chewing on those!!
