Last night's dinner was roasted bone in-skin on chicken thighs w/roasted cauliflower, onion, and summer squash, all rubbed/mixed with minced garlic, ginger, and various Indian spices.

this morning's breakfast was an omelet with the leftover roasted vegetables. (I'm not really fond of eggs any more--unless they're an omelet or quiche packed w/vegetables, or poached over a crabcake w/chopped crisp bacon sprinkled over the top...OK, and a deviled egg once in a while is pretty OK, too ;-)

tonight's dinner will be cream of asparagus soup w/leftover baked chicken.
