<< I used to withhold at the single rate but now claim 7 federal and 4 state exemptions ( I am married, my wife is a stay-at-home mom and does not provide income and I have 2 children). My take-home pay has increased since I changed to these new exemptions. I have never owed any federal income tax at tax time and am wondering will these new exemptions cause me to owe taxes next April? >>

It's impossible to say without more information. There is a worksheet included on Form W-4 which you can use to calculate the number of allowances you should claim. Claiming that number will result in a small refund or balance due.
