Made the cheese sauce this morning.
Seemed a little thin to me so I added 1 teaspoon powdered sunflower lecithin to it. Still seemed thin but I let it go at that.
It makes right at 2.5 cups.
I figure a serving size would be 1/4 cup.

I did all the calculations required and came up with nutritional information per 1/4 cup serving:

Calories: 68
Total Fat: 5.3 g
Sodium: 396 mg
Carbs: 4.4 g
Fiber: 0.8 g
Sugar: 1.0
Protein: 1.2

Not as fattening as I would have thought.
I called AngelSpouse into the kitchen for a tasting and he pronounced it very cheese-like.

We shall see how it works out. It's in the fridge now cooling off.
