Made the cheese sauce this morning.Seemed a little thin to me so I added 1 teaspoon powdered sunflower lecithin to it. Still seemed thin but I let it go at that.It makes right at 2.5 cups.I figure a serving size would be 1/4 cup.I did all the calculations required and came up with nutritional information per 1/4 cup serving:Calories: 68Total Fat: 5.3 gSodium: 396 mgCarbs: 4.4 gFiber: 0.8 gSugar: 1.0Protein: 1.2Not as fattening as I would have thought.I called AngelSpouse into the kitchen for a tasting and he pronounced it very cheese-like.We shall see how it works out. It's in the fridge now cooling off.AM
