I was fixing a ratatouille variation to clean out the fridge today, and stirred some cooked quinoa into it. Perfect dinner for 2-3, or 2 adults and 2 children.Cook it as you prep it:(1) Saute' 1 large chopped onion in 1 Tbsp olive oil.(2) Stir in 1 medium box button mushrooms, sliced (not pre-sliced--those are too thick IMO).(3) Add 1 green pepper and 1/2 red pepper, chunked.(4) Add 2 tsp herbes de provence and 4 cloves garlic, minced.(5) Add 1 medium eggplant, large dice (leave peel on).(6) Stir in a cup or so of tomato juice or crushed tomatoes or a few fresh tomatoes, whatever you have (I had tomato juice that needed using).(7) Simmer till done and let sit in the covered pot awhile while the eggplant and peppers turn into the creamy texture of custard(!), then stir in 2 cups cooked quinoa, and salt to taste.
