My grandparents always made these for Christmas and so that is the only time I make them too:Coconut Goofballs1/2 cup butter1 1/4 cup sugar2 cups chopped dates2 eggs1/2 tsp salt2 tsp milk1 tsp vanilla extract4 cups rice krispies3/4 cup chopped, toasted pecans2 cups flaked coconutCombine sugar & butter in a quart size pot. Heat over medium heat until sugar is dissolved and butter is melted. Add chopped dates and cook until the dates start to dissolve (the color will change to a darker brown). In a separate bowl combine eggs, milk, salt, and vanilla, and whisk to combine. Add to the hot sugar/date mixture and stir quickly (you might want to temper the eggs first with some the date mixture). Cook for an additional two minutes, then remove from heat and add the rice krispies and pecans. Stir to thoroughly combine, then make teaspoon sized balls and roll them in the coconut. Makes 3 dozen.
