My grandparents always made these for Christmas and so that is the only time I make them too:

Coconut Goofballs

1/2 cup butter
1 1/4 cup sugar
2 cups chopped dates
2 eggs
1/2 tsp salt
2 tsp milk
1 tsp vanilla extract
4 cups rice krispies
3/4 cup chopped, toasted pecans
2 cups flaked coconut

Combine sugar & butter in a quart size pot. Heat over medium heat until sugar is dissolved and butter is melted. Add chopped dates and cook until the dates start to dissolve (the color will change to a darker brown). In a separate bowl combine eggs, milk, salt, and vanilla, and whisk to combine. Add to the hot sugar/date mixture and stir quickly (you might want to temper the eggs first with some the date mixture). Cook for an additional two minutes, then remove from heat and add the rice krispies and pecans. Stir to thoroughly combine, then make teaspoon sized balls and roll them in the coconut. Makes 3 dozen.
