It's rare that we add a new toy to the galley inventory, but this year we were convinced by a very good cook that an Instant Pot would not be one of those things that grows old in the back reaches of some bottom shelf.

It looks just like a slow cooker but it is also a computer controlled pressure cooker with a sophisticated touch pad for times and temps. $99 @ Amazon.

1st up, DW knocked out a batch of green curry chicken. :45 instead of hours. It took less than an hour to cook the chicken and the rice.

Next up.... yogurt. We eat a lot of yogurt and feed it to our dog as well. At $7 bucks a carton, Greek yogurt adds up fast. Last night, as we slept, Instant Pot turned a quart of 2% milk and a spoon of the pricey yogurt (bacteria starter culture)into a quart of pricey yogurt! Heat the milk, let it cool, add a spoon of starter yogurt, press 'yogurt' button, go to sleep. Morning: Yogurt!

$3 for a gallon of 2% milk = .75 for a qt of Greek yogurt.

Today DW is going to do an Instant Pot of Santa Maria beans to go with a BBQ'd tri tip. Usually we'd have a pot of beans soaking overnight. Not this time. Wish us luck!
