"what's the difference between fruits and vegetables, and why?"

Fruit is what the plant puts around the seeds to encourage animals to spread the seeds, like apples, tomatoes, oranges, etc. And a vegetable is the plant itself. However most people are sloppy in this distinction and call fruits like eggplant, peppers, and tomatoes vegetables.


"What's the difference between grains, legumes, beans, and other related, And why?"

Grains are the seeds of grasses. Legumes are a group of plants that have nitrogen-fixing bacteria living in nodules in their roots. Their seeds are high in protein and make good food. Legumes include beans, peas, peanuts, etc.


"What exactly are "carbohydrates" (or "carbs") in general parlance, versus "starches"? "

Carbohydrates are sugars and compounds made up of groups or strings or sugars bonded together in one molecule. Starches are mid-sized strings of sugars. Cellulose is a longer string of sugars.


"What do you consider processed or unprocessed, "

pretty subjective here. I usually consider things that I can buy in bulk or without food labels to be unprocessed.
